What's Cookin'
Following are some recipes from the South Hobby Club of Colony Cove,
Ellenton Florida:
PASTA VEGETABLE SALAD
1- cups uncooked tricolor spiral pasta
cup fresh broccoli florets
cup cauliflower
cup chopped cucumber
cup chopped celery
1/3 cup sliced carrot
cup chopped tomato
to 1/3 cup ranch salad dressing
Cook pasta according to package directions; drain and rinse with cold water. Place in a large bowl; add vegetables. Drizzle with salad dressing; toss to coat. Cover and refrigerate for 1-2 hours. Yield:4 servings.
LEMON HERB CHICKEN
4 boneless skinless breast halves
cup chicken broth
teaspoon lemon-pepper seasoning
to 1 teaspoon dried thyme
teaspoon garlic powder
Flatten chicken to 3/8 -in thickness; place in a skillet.
Add broth; bring to a boil over medium heat. Reduce heat; cover and simmer for 5 minutes. Turn chicken; sprinkles with seasonings. Cook 3-5 minutes longer.
Yield: 4 servings.
HAM WITH CURRANT SAUCE
1 bone-in fully cooked ham slice [about 1 lb.]
cup water
1/3 cup currant jelly
1 teaspoon prepared horseradish
In a large skillet bring the ham and water to a boil. Reduce heat; cover and simmer until ham is heated through, turning once. Meanwhile in a microwave safe small bowl, combine jelly and horseradish. Cover and microwave on high for 2-3 minutes or until heated through, stiring occasionally. Serve over ham.
Yield 2 servings
