Truffles may seem intimidating, but are one of the easiest candies of all to make. I adapted this from a recipe given to me by my sister-in-law, Cindy.Peanut Butter Cup Truffles
1 cup softened butter (no substitutes!)
1 cup powdered sugar
1 cup peanut butter (name brand like Skippy--natural isn't as good, sorry)
1 cup crushed graham crackers
1 cup finely chopped nuts (optional)
1 teaspoon vanilla
few grains salt
Cream butter until fluffy; gradually add powdered sugar, salt and vanilla. Stir in nuts (if desired) and graham cracker crumbs. Chill until firm. Roll into 1" balls and roll in cocoa powder, powdered sugar, sprinkles, ground nuts or whatever sounds good to you. That's it!
If giving as a gift, buy tins at the thrift store and use wax paper between layers.
Tip: If you must soften the butter in the microwave, do it on the lowest possible setting and check every 10 seconds. Do NOT let it start to melt!
