For OpEdNews: Kenneth Briggs - Writer Grilled portobello mushrooms with red pepper sauce This recipe is a low-fat, vegetarian alternative to grilled hamburgers that even meat eaters can enjoy! ½ cup chopped, drained roasted red peppers from jar ¼ cup low-fat mayonnaise 1 garlic clove, chopped 1/8 tsp. cayenne pepper 4 large portobello mushrooms, stems removed 4 slices red onion, ½ inch thick ½ tsp. ground black pepper 4 hamburger buns, 100% whole wheat 4 lettuce leaves Blend the red peppers, mayonaise, garlic and cayenne pepper in a food processor until smooth. Preheat grill to medium heat. Spray mushrooms and onion slices with cooking spray; sprinkle with black pepper. Grill mushro0oms and onions for about 12 minutes, turning often, until tender. Place the buns on the grill and toast about 5 minutes or untill golden brown. Spread each bun with the pepper spread and place a slice of onion, lettuce and mushroom on each bun. Serves four.
